I'm trying to set up a transformatio form our national LandUse dateset to an INSPIRE GriddedExistingLandUse dataset
Are there any dataset for this, that I could use as an example.

Raster data (included gridded land cover or land use) in INSPIRE is based on ISO Coverages concept. How to implement Coverages is not a simple matter, because implies a particular type of GML files or WCS services . I recomend you to follow the raster Clusters of Orthoimagery and Elevations to obtain a complete vision of the matter. I put below some interesting links.

Last INSPIRE specifications on WCS document (to be honest I have not read yet, but it seems to me the prefered solution for raster data):
you could also consider the option to encode the raster dataset using a reference to an external file.
The option to encode the "rangeSet" attribute as external file foresee the use of an http URI (e.g. a link to a geotiff file).
